The Tojiro DP sujihiki is a slicing knife with a blade core of cobalt alloy steel built with a clad (warikomi) construction, chosen for durability and the ability to hold a sharp edge.
The blade has a honzuke finish, meaning it comes fully sharpened and ready to use. A metal bolster is fitted between the handle and the blade.
This knife is made in Japan. It is available in two blade lengths, 24 cm and 27 cm.
