Azuma Punched Mesh Frying Skimmer (Kasuage)

This frying skimmer, known in Japanese as a kasuage, is fitted with a punched metal mesh instead of woven wire. Because the mesh is made of small punched holes rather than crisscrossed strands, food debris and oil residue do not get caught in it the way they do with a traditional woven skimmer.

That makes cleanup noticeably easier after use. At 29 cm (11.4 in) long with a 7.3 x 7.3 cm (2.9 x 2.9 in) scoop, it gives good reach over a pot of hot oil while lifting fried foods out cleanly.
