This copper tamagoyaki pan is a Kyoto style rectangular omelette pan used for making tamagoyaki, the rolled Japanese omelette. Copper conducts heat well, which is why it is used for this type of pan. This listing offers three sizes: 12cm Short, 12cm Long, and 15cm.
Because copper is sensitive to acid and chlorine, food should not be left sitting in the pan for long periods. The copper surface is also soft and can scratch easily, so hard or sharp tools should be avoided when stirring or washing. If the copper oxidizes, a green patina (verdigris) may appear on the surface; this is harmless.
Minor surface marks or slight color variations may occur during manufacturing and do not affect quality or performance. Made in Japan.
