This deba, a traditional Japanese single bevel knife for preparing fish, is made with a molybdenum vanadium steel blade for a sharp, durable edge that resists rust. The handle is magnolia (ho) wood fitted with a resin ferrule. Made in Japan.
Fuji Cutlery was founded as the sales company for Tojiro, a cutlery maker based in Tsubame Sanjo, Niigata. The Fuji name comes from Mount Fuji, shown in the Tojiro logo, and the brand aims to bring Tojiro's sharpness and usability to a more casual line.
Left handed versions of this knife are also available. This listing offers three blade sizes: 150mm, 165mm, and 180mm.
