These kitchen knives from Fuji Cutlery feature a molybdenum vanadium steel core clad with 13 chrome stainless steel, a construction chosen for strong corrosion resistance and an edge that holds up well with use. A stainless steel bolster at the base of the blade adds durability and keeps the knife hygienic, and the handle is POM resin.
Each knife is dishwasher safe and made in Japan. We offer this knife in three types: a petty knife suited to peeling, trimming and cutting smaller ingredients, a santoku knife for general use with meat, fish and vegetables, and a gyuto chef's knife for broader cutting tasks across meat, fish and vegetables.
Fuji Cutlery was established as the sales company for Tojiro, a cutlery maker based in Tsubame Sanjo, Niigata, and takes its name from Mount Fuji, which appears in the Tojiro logo. The brand brings that sharpness and ease of use to a more casual, original lineup.
