Fuji Cutlery's MV Color Santoku Knife comes from a long running commercial series used in school lunch centers, bento box factories, and deep fried food specialty shops across Japan. It has a blade length of 170 mm (6.7 in), an overall length of about 305 mm (12 in), and weighs about 130 g (4.6 oz).
The handle is made of slip resistant thermoplastic elastomer resin and is offered in six colors, so kitchens can assign a different color to each ingredient type and keep tools organized. We offer this knife in White, Yellow, Red, Blue, Green, and Black.
The handle is joined to the blade by insert molding, fusing metal and resin into one piece with no gap between them. This keeps water from collecting in the seam the way it can with riveted handles, making the knife easier to keep clean.
The blade is molybdenum vanadium stainless steel, chosen for its resistance to rust and chipping and for holding its edge through repeated use. This knife is made in Japan.
