This knife belongs to Fuji Cutlery's Reigetsu Yoi series, a matte black knife line designed to resist oil stains and clean up easily.
The blade is made of molybdenum vanadium steel for durability and long lasting sharpness, finished with a silicone fluorine coating so the coated surface will not rust. It is a double edged blade, with the edge honed by hand, one knife at a time, by knife makers in Tsubame Sanjo, Niigata, a region known for cutlery making.
The handle is made of heat resistant polypropylene resin and nylon, shaped with rounded curves for a comfortable grip. Compared with typical knives that have a bolster, this knife is lighter, putting less strain on the wrist during use.
This knife is offered in several types and blade sizes: Petty, Nakiri, Santoku, Gyuto (available in three lengths), and Sujihiki. It is made in Japan.
