This is an Usuba vegetable knife with a square tip, a single-edged Japanese blade made for thin slicing, peeling, and fine cutting of vegetables. The blade is molybdenum vanadium steel, chosen for sharpness and durability, and is finished to resist rust.
The handle is magnolia (honoki) wood, with a collar made of polyethylene and polypropylene resin. A left-handed version of this knife is also available.
This knife is offered in two blade lengths, 180mm and 195mm, so you can choose the size that suits your work.
Fuji Cutlery was founded as the sales company for Tojiro, a cutlery maker based in Tsubame-Sanjo, Niigata, and carries the same focus on sharpness and usability in a more casual, original brand. This knife is made in Japan.
