This is a Yanagiba sashimi knife from Fuji Cutlery, a single edged Japanese blade made for slicing fish and sashimi into clean, thin cuts. The blade is molybdenum vanadium steel, chosen for sharpness and durability, and is finished to resist rust.
The handle is magnolia (honoki) wood, with a collar made of polyethylene and polypropylene resin. A left handed version of this knife is also available.
Fuji Cutlery was founded as the sales company for Tojiro, a cutlery maker based in Tsubame Sanjo, Niigata, and carries the same focus on sharpness and usability in a more casual, original brand. This knife is made in Japan.
This knife is offered in two blade sizes: 240mm and 270mm.
