This donabe clay pot is made by Ginpo, a Japanese maker producing clay pots since 1972. It belongs to the Mishima line and is produced in Yokkaichi, Mie Prefecture, home of Yokkaichi Banko ware. This style became known nationwide around 1960 after makers began mixing petalite, a mineral, into the clay to greatly increase its heat resistance, which is what allows Banko ware donabe to be used safely over direct heat.
The pot includes a removable stainless steel plate that attaches to the bottom for use on an induction (IH) cooktop. Press the plate in firmly until it snaps into place; it will not heat on IH if it is upside down or not fully seated. Remove the plate to use the pot on a gas flame, a radiant heater, or other traditional heat sources.
It measures 31 x 28 x 16.4 cm (12.2 x 11 x 6.5 in) with a capacity of 3.2 liters (3.4 qt), sized for 4 to 5 servings.
