This is a komaita, the guide board used when cutting handmade soba noodles. You lay it on the folded, rolled out dough and run your soba knife along its edge, so each noodle is cut to an even width.
The base board is natural wood, and the raised guide piece, called the makura or pillow, is made of hard beech wood so it holds its shape against the knife.
Some versions of this board include a handle, which makes it easy to hold and move along the dough, and we recommend those for beginners. It is made in Japan by Hounen, a maker of tools for soba making.
We offer this komaita in small, medium and large sizes, with or without a handle.
