Hounen Soba Cutting Guide Board (Komaita) Medium 200x245x25mm

This is a medium komaita, the guide board used when cutting handmade soba noodles. You lay it on the folded dough and run your soba knife along its edge so that each noodle is cut to an even width.

The base board is natural wood, and the raised guide, called the makura or pillow, is made of hard beech wood. A handle is attached, which makes the board easy to hold and move along the dough. We recommend it for beginners.

The board weighs 250 g (8.8 oz / 0.55 lb). It is made in Japan by Hounen, a maker of tools for soba making.
