This wooden drop lid, or otoshibuta, rests directly on the food while it simmers. This keeps delicate ingredients from falling apart and helps the simmering liquid reach every part of the dish evenly.
It is made from spruce, a wood chosen because it does not easily pass its own scent onto food. The handle is joined using wood alone, without adhesives, nails, or screws, for a sturdy and reliable grip.
Beyond simmered dishes, it is also handy for pickling, as a lid for a cast iron pot, or to cover a bowl or colander.
Koyanagi Sangyo, founded in 1926 in Tsubame-Sanjo, Niigata, a region known for metalworking, makes original items that combine wood and metal, and this drop lid is made in Japan.
