This Kyocera santoku knife is part of the Colorful Kitchen series and uses a fine ceramic blade, well suited for cutting meat, fish, and vegetables. The ceramic edge is designed to cut smoothly and stay sharp for a long time, so you spend less time resharpening.

At about 80 g (2.8 oz), it is roughly half the weight of a comparable metal knife, making it easier to use during long prep sessions. The handle uses sugarcane-derived green polyethylene in place of some petroleum-based plastic.
