Kyoto Katsugu 17-Layer Molybdenum Damascus Santoku Knife 165mm

This Kyoto Katsugu santoku knife has a 165 millimeter (6.5 inch) blade made from V-10 high-carbon stainless steel, a steel known for hardness, edge retention, and resistance to rust.

The V-10 core is clad in 17 layers of stainless Damascus steel, wrapping the harder center in softer layers the way a traditional Japanese sword is built, which helps the blade resist bending and chipping while keeping a sharp edge. The pressure applied during cladding also tightens the steel grain, improving sharpness and how long the edge lasts.

The handle is laminated reinforced wood in black, chosen for its grain and its resistance to water damage over long term use. Made in Japan.
