This yukihira style pot is a Japanese kitchen staple, used constantly for boiling water and for light simmering and cooking. The body is aluminum, which is lighter than iron or stainless steel so it is less tiring to hold, and it conducts heat quickly for fast boiling.
The surface is finished in Japan with an alumite (anodized) process that forms a protective oxide layer, adding durability and corrosion resistance. The pot wall is noticeably thicker than many inexpensive yukihira pots, so heat reaches food more gently and the pot holds its warmth longer after being removed from the heat.
The handle is solid oak, a wood also used in fine furniture, so the grain varies from pot to pot and develops character with use. It is finished with wax rather than a glossy urethane coating, keeping the natural look of the wood while adding durability and water resistance. The pot has two spouts, a wide one for pouring larger amounts and a narrow one for fine, controlled pouring.
This pot is made in Japan and is available in three sizes (16 cm, 18 cm, and 20 cm), each offered as either an induction (IH) compatible version or a standard stovetop version.
