This Kyoto Katsugu iron frying pan is designed to improve with use, the way well loved iron pans have for generations in Japanese kitchens. Its hard tempered surface finish means there is no need for the usual initial burn off and oil seasoning before first use.
As you continue to cook with it, oil works into the surface, making food release more easily over time. The side walls are shaved down to reduce weight while keeping the heat capacity and strength needed for cooking, so the pan handles lighter than one made without this shaping.
The handle is oak, a wood also used for tools like wooden swords, batons, and drumsticks for its hardness and resistance to moisture. Made in Japan.
Choose from three sizes, 20 cm, 26 cm, and 28 cm, to match your cooking needs.
