The yukihira nabe is a classic Japanese pot for boiling water and quick simmered dishes, one of the most frequently used tools in a Japanese kitchen. Aluminum is lighter than iron or stainless steel, so it is less tiring to hold, and it conducts heat quickly for fast boiling.
The surface has an alumite (anodized) finish, a Japanese-developed process that improves durability and corrosion resistance. At 2 mm (0.1 in), the plate is 1.2 to 2 times thicker than lower-cost yukihira pots, so heat spreads evenly into the food, and the pot also holds heat and stays warm longer.
The handle is solid oak, also used in fine furniture, finished with wax rather than glossy urethane to keep its natural texture while adding durability and water resistance. Because oak grain varies, each handle looks a little different.
It has a diameter of 20 cm (7.9 in) and a full capacity of 2.6 liters (2.7 qt), weighs 480 g (16.9 oz), and is made in Japan.
