This Kanto-style square wooden steamer (kakuseiro) is built for professional and home kitchen use, assembled with the single-prong (ichihon-zume) corner joint typical of this steamer style. It is made from sawara cypress, a lightweight, moisture-resistant wood long used for Japanese steamer baskets, and is designed to sit over a pot or wok for steaming food.
This steamer frame comes in a shallow and a deep depth. The shallow depth suits items that do not need a tall basket, such as buns or small portions, while still letting steam circulate evenly. The deep depth gives extra clearance for taller or bulkier food.
As sawara is a natural material, slight differences in color and grain, along with minor surface marks, can occur from piece to piece; these variations are normal and do not affect quality or performance.
This frame is offered in six sizes (30, 33, 36, 39, 42, and 45 cm) across both the shallow and deep depths. Matching bamboo steamer mats, punched mesh screens, crimped mesh screens, and wood trivets sized for these steamers are also available separately.
