This cutting board is made specifically for cutting soba noodles, crafted from Kiso sawara cypress by Shimizu Mokuzai.
The board is made by cutting square sawara timbers crosswise and joining the cut ends together, creating an end grain surface. This construction wears down very little even after long use and has a resilient feel under the knife.
The board is left as natural, uncoated wood and is made in Japan.
