Shimizu Mokuzai Tsukemono Pickling Barrel Sawara Wood Large 17L

This is a large wooden tsukemono pickling barrel made from Kiso sawara cypress with bamboo hoops by Shimizu Mokuzai. It holds 17 L (18 qt) and measures 33 x 33 x 30 cm (13 x 13 x 11.8 in).

Because the wood breathes, it helps rice bran (nuka) mature. The thickness of the wood keeps out heat and light, and odors are less likely to transfer, so you can make flavorful pickles.

The wood is left uncoated. Made in Japan.
