Shimomura Ajiwai Shokubo Meat Tenderizer Tool ANS-663

This meat tenderizer from the Ajiwai Shokubo series cuts the sinew and fibers of meat as part of preparation before cooking.

Cutting the sinew keeps meat from shrinking during cooking so it keeps a good shape, and it makes tough cuts more tender. Heat passes through more evenly and seasonings soak in better.

The tip has comb-shaped blades that cut sinew with light pressure. They are made of 18-8 stainless steel, which is hygienic and resists rust.

The tool measures 14.6 x 6.2 x 2.4 cm (5.7 x 2.4 x 0.9 in) and weighs 50 g (1.8 oz / 0.11 lb). Made in Japan.
