This Chinese cleaver belongs to Shimomura Kogyo's Verdun knife series. Skilled craftsmen finish the edge smoothly so it cuts with little effort. It handles bold chopping as well as delicate work, so one knife can cover a wide range of cooking tasks.
The blade is molybdenum vanadium steel, which combines sharpness with toughness that resists chipping. The blade is 180 mm (7.1 in) long and 2.5 mm (0.1 in) thick, and the overall length is 310 mm (12.2 in).
The polypropylene handle is hygienic, and the knife is dishwasher safe. Made in Japan.
