The Neo Verdun series from Shimomura Kogyo is an all purpose line of Japanese kitchen knives built for meat, fish and vegetables. Each blade is made from molybdenum vanadium stainless steel and hand honed by craftsmen in Tsubame Sanjo, giving it a smooth cutting edge that slices with light pressure and holds that edge over time.
The blade and handle form one seamless all stainless piece, so there is no gap where food or moisture can collect, and the whole knife is dishwasher safe. The straight handle is thicker at the end for a firm grip on hard foods, slim near the blade for control, and hollow to keep the knife light in hand.
This listing is offered in a Santoku and two Gyuto lengths, so you can choose the blade style and size that fits the way you cook. Made in Japan.
