This double knife sharpener from Shimomura Kogyo's Pro Grade line restores a knife's edge using a diamond coarse stone followed by an alumina ceramic finishing stone. You sharpen it simply by pushing and pulling the blade back and forth, and it is designed for double-bevel knives made of stainless steel or titanium.
The sharpener uses a water-sharpening design that resists clogging, with a handle shaped to be easy to grip and a rubber pad on the underside for a stable, non-slip base while you work.
Made in Japan. Choose the complete sharpener unit, or a replacement stone set to renew it once the stones wear down.
