This slicer is part of Shimomura Kogyo's Pro Grade series, which brings the cutting feel of professional kitchen tools into a design that is easy to use at home. It lets you cut crisp, clean julienne strips with only light pressure.
The blade is ground very thin and sharpened on both sides, so it meets little resistance and cuts efficiently on both the push and the pull stroke. A specially shaped blade gives each strip a clean square cross section with sharp, well defined edges, which also improves the texture of the cut.
This slicer is offered in a choice of cut widths, from extra fine to thick julienne, so you can pick the strip size that suits your dish.
