Every peeler uses a stainless cutlery steel blade set in an 18-8 stainless steel frame. On the julienne styles, each tooth of the comb blade is sharpened by hand by skilled craftsmen, so it bites into food easily and a single quick pull produces even strips. The standard peeler instead uses a curved blade, also hand sharpened along its curve, which follows the roundness of vegetables for a wider cut with every stroke.
