Shimomura Ryuji Color Petty Knife 15cm Black

The Ryuji Color petty knife from Shimomura Kogyo is designed to feel light and comfortable in the hand during long periods of kitchen work. The handle uses a thin, hollow clamshell (monaka) construction to reduce weight and ease strain on the hand, and the stainless steel handle is a one-piece design.

The blade is made of molybdenum vanadium steel, and the handle is 18-8 stainless steel finished with a baked urethane coating. This petty knife has a blade length of 150 mm (5.9 in), an overall length of 275 mm (10.8 in), and a spine thickness of 1.8 mm (0.07 in). It weighs 100 g (3.5 oz / 0.22 lb).
