This is a nakiri vegetable knife from Shimomura Kogyo's Ryuji Stainless Color series, developed with lightness and a comfortable grip as the top priority so it causes less strain during long periods of food prep. The straight edge of a nakiri is suited to push cuts, making it useful for slicing, chopping and mincing vegetables.
The handle uses a thin, hollow monaka-style (clamshell) construction to keep weight down and reduce strain on the hand. It is built as a single integrated piece of 18-8 stainless steel finished in red with a urethane baked coating, so there are no seams where food or liquid can collect.
The blade is molybdenum vanadium steel, with a blade length of 165 mm (6.5 in), a spine thickness of 2 mm (0.08 in), and an overall length of 300 mm (11.8 in). The knife weighs 145 g (5.1 oz / 0.32 lb).
