Shimomura Ryuji Stainless Color Sujihiki Slicing Knife 27cm Yellow

This sujihiki slicing knife is part of Shimomura Kogyo's Ryuji Stainless Color series, made in Japan for carving and thin slicing of cooked meats and fish.

A hollow, monaka-style handle uses thinner panels to cut weight and ease strain on the hand during long prep sessions. The handle forms one continuous piece with the blade and is finished in yellow with a baked urethane coating. The blade is molybdenum vanadium steel, and the handle is 18-8 stainless steel. The spine is 2.5 mm (0.1 in) thick.
