This knife from Shimomura Kogyo's Unryu series features a VG10 steel core clad in 33 layers of Damascus steel. Like a Japanese sword, soft and hard stainless steels are forged in alternating layers to create a graceful mist pattern on the blade. The cobalt containing VG10 core gives the blade excellent hardness and long lasting sharpness.
Craftsmen in Tsubame Sanjo, Japan's historic cutlery district, finish each blade with a traditional water stone sharpening. The seamless stainless steel bolster is hygienic and durable, and the laminated reinforced wood handle is secured with sturdy full tang rivets.
This knife is offered as a middle santoku, a santoku, or a gyuto chef knife, each with its own blade length. Made in Japan.
