This santoku knife comes from Shimomura Kogyo's Verdun series of all-stainless knives. The series is designed for ease of use and sharpness, with the aim of making everyday cooking more enjoyable. The blade is 165 mm (6.5 in) long, and the knife is 295 mm (11.6 in) long overall. The blade is 1.8 mm (0.1 in) thick.
Craftsmen in Tsubame-Sanjo hand-sharpen each edge to a smooth finish. The knife bites into food well and cuts with light pressure. Molybdenum and vanadium are added to the stainless steel to help the edge stay sharp longer.
The rounded handle sits comfortably in the hand and fits the fingers, which makes detailed work easier. The one-piece, seamless construction is easy to wash and is dishwasher safe.
