This saucepan from Tanabe Kanagu is made of nitrided iron, a heat treatment that infuses nitrogen into the iron to strengthen its surface. Nitrided iron resists warping, scratching, rust, and sticking, and because the iron itself is transformed rather than coated, the surface will not flake off with use. Once the pan has been through an initial oil seasoning, it is ready for regular use.
It is well suited to curry and soup, holding heat well for slow simmering, and its small size also works as a one-person fryer. The handle is natural walnut wood with an octagonal shape that is easy to grip, finished with a clear urethane coating, and a ring on the handle lets the pan hang on a wall or hook. The pan works on all heat sources, including induction (IH).
It measures about 16 x 16 x 10 cm (6.3 x 6.3 x 3.9 in), weighs about 870 g (30.7 oz / 1.92 lb), and holds about 1.8 liters (1.8 qt) when filled to the brim.
This pan carries the Made in Tsubame mark, which promises that the product was carefully made with the customer in mind, for quality and peace of mind.
