This is a nonstick madeleine pan from Tiger Crown's Albrit series, with shell-shaped cavities for baking madeleines. The aluminum body conducts heat efficiently and is coated twice with fluororesin, which gives it good resistance to rust while keeping it very lightweight.
The double fluororesin coating also means baked goods release cleanly from each cavity and cleanup is simple.
The pan can be used for both baked sweets and chilled desserts. It is made in Japan.
This pan is available with 6 or 9 cavities.
