This tart pan from Tiger Crown's Albrit series has a bottom that lifts out separately from the ring, so the finished tart releases cleanly and in one piece.

The pan has an aluminum body finished with a double layer of fluorocarbon resin nonstick coating. Aluminum conducts heat efficiently and resists rust while keeping the pan lightweight, and the coating lets baked goods release easily and makes the pan simple to wash afterward.

It works well for both baked tarts and chilled desserts, and it is made in Japan.
