This heart shaped cake ring from Tiger Crown is a cercle, a bottomless ring pan made of 18-8 stainless steel that resists rust and is easy to care for.
Use it to cut a heart shape out of a sponge cake baked flat on a sheet pan, or to line the bottom with a thin tart or sponge base and set a Bavarian cream or mousse inside to chill until firm. Because the ring has no bottom, the filling should be one that will not run out.
This ring is made in Japan and offered in two sizes (90mm and 120mm) and two depths (shallow and deep).
