This Pullman style bread pan comes with a lid and is made from a thick, aluminized steel plate that conducts heat evenly, so loaves bake through without dense or uneven spots. It is designed for baking square, shokupan style Japanese sandwich bread at home.

The lid slides into place rather than resting loosely on top, so it stays closed and will not lift off during baking. Leave the lid off and the same pan bakes a loaf with a rounded, peaked top instead of the usual flat topped shape. The pan also becomes easier to release bread from the more it is used.
