This cercle ring pan from Tiger Crown is a bottomless frame rather than a complete pan. It can be used to cut a round shape out of sponge cake baked flat on a sheet pan, or to line the bottom with a thin layer of tart or sponge cake before chilling a filling such as bavarois or mousse inside until set.
Because the pan has no bottom, it works best with fillings that will not leak out while chilling. It is made of 18-8 stainless steel, which resists rust and is easy to handle and clean.
This pan is made in Japan and is offered in two sizes: a shallow 15 cm round and a deeper 18 cm round.
