This tamagoyaki pan is made of pure copper with a tin-lined interior and is designed for cooking thin egg sheets in the usuyaki style. Copper's excellent heat conductivity helps the pan heat evenly for thin, delicate eggs. It is made in Japan and is available in 15 cm, 18 cm, 21 cm, and 24 cm sizes.
Because copper is sensitive to acid and chlorine, avoid leaving food sitting in the pan after cooking. The copper surface is also soft and scratches easily, so use soft utensils and avoid abrasive scrubbing or sharp tools when stirring or cleaning.
The copper may develop a greenish patina (verdigris) over time from oxidation; this is harmless. Minor surface marks or slight color variation from the manufacturing process may also occur and do not affect quality or performance.
