This oval (koban) frying pan from Wadasuke is made in Japan from copper, with a brass handle and a tin lining hand applied to the interior. Copper cookware is valued for its durability and performance, and its high thermal conductivity lets heat spread across the pan quickly and evenly.
Because heat reaches the food evenly, there are no hot spots, and ingredients cook through for a light, fluffy result. Direct response to changes in the flame also makes fine temperature control easy, which suits delicate dishes such as eggs and meat. The copper body also retains heat well, making it suited to slower cooking with gentle, steady heat.
Because the interior has a tin lining, avoid scrubbing it with metal scouring pads and do not heat the pan while it is empty.
This pan is offered in seven sizes, from 20 cm to 36 cm, so you can choose the one that fits your cooking needs.
