This tamagoyaki pan from Wahei Freiz's Chitose series has an iron body with a silicone resin coating and a natural beech wood handle. It is designed for making Japanese rolled omelets and also suits general stir frying and pan frying, since iron takes on oil well and helps food release from the surface.
Iron cookware improves the more it is used. As the surface is seasoned with oil over time, food becomes less prone to sticking, so with proper care the pan can serve for many years.
The Chitose name reflects the idea that every scratch and change of color is a record of daily use, so the pan takes on new color and character the longer it is cared for, much like a tool passed down within a family. Made in Japan.
This pan is offered in two sizes.
