This pan from the Wahei Freiz Eira series is made of iron that has been nitrided, a process that combines nitrogen with the iron surface to increase hardness and resistance to rust. The handle is natural keyaki (zelkova) wood.
Iron heats quickly and evenly, so pan fried food browns with a pleasant aroma and stir fried ingredients keep a crisp texture. There is no need to season the pan or fire it empty before first use, so it is ready to cook with right away, and metal spatulas and turners can be used on the surface.
After cooking, the pan can be scrubbed firmly with a scouring pad or bamboo brush. To keep it in good condition, wash it with hot water while it is still warm, dry it over medium heat to remove moisture, then wipe a thin layer of oil into the inside with a paper towel. A booklet on caring for nitrided iron cookware is included, and the pan can be used on induction (IH) cooktops.
