This iron frying pan from the Enzo series is made in Tsubame-Sanjo, Niigata, combining the skills of local factories. It is designed for searing, and it is especially well suited to steak.
The pan's thickness was chosen through repeated testing to spread heat evenly with little unevenness. Japanese iron holds heat well, so the temperature drops little when food goes in, and you can cook quickly over high heat for a fragrant sear that keeps meat juicy. The deep sides, formed by spinning rather than pressing, help when adding sauces.
The handle combines natural beech wood with stainless steel for a comfortable grip. Works on both gas and induction (IH) stovetops.
This frying pan is offered in four sizes: 20 cm, 22 cm, 24 cm, and 26 cm.
