This iron frying pan is part of the Gensen Sozai (selected material) series from Wahei Freiz. Cooking at high heat lets vegetables stir-fry with a crisp texture instead of turning watery, and unlike a fluororesin-coated pan, there is no coating that can peel off over time, so it stays usable for a long time with simple care.
After cooking, rinse off any residue with hot or warm water (a scrub brush works well), dry the pan, then heat it on the stove to drive off any remaining moisture. Storing it with a thin coat of oil helps prevent rust. With regular use and care, the iron darkens and develops a seasoned surface with more flavor over time.
The pan works on gas stoves and on induction (IH) cooktops at 100 to 200V, and it is made in Japan. It is offered in two sizes, 22 cm and 26 cm.
