This rice paddle from Wahei Freiz has a double embossed surface: raised bumps across the paddle with finer ridges layered on top of them. This texture reduces the contact area between the paddle and the rice and helps it hold a thin layer of moisture, so rice is much less likely to stick to it.
The non-stick surface is especially helpful with sticky dishes made from glutinous rice, such as sekihan (red bean rice) and gomoku gohan (mixed rice). Because rice does not cling to the paddle, cleanup after use is quick and easy.
