This 20 cm (7.9 in) iron stir fry pan comes from the Enzo series, made in Tsubame, Niigata, a town with a long metalworking history that grew into Japan's leading housewares producer.
Iron handles high heat, and its heat conduction and retention spread heat evenly for well cooked food. The deep, cylindrical shape, similar to a single-handle pot, suits simmered dishes, deep frying and much more. It is induction (IH) compatible.
After use, let it cool fully, then scrub with a brush without detergent. Dry it thoroughly over heat and wipe on a thin coat of oil. It takes a little care, but it is a tool you can use for years.
