This Wazaippin pan from Wahei Freiz is made in a Japanese factory using gravity die casting, in which molten aluminum alloy is poured into a die under its own weight. Skilled craftspeople finish each pan by hand, giving the cast aluminum body resistance to warping and durability, with a thick base that helps reduce uneven heat.
The body's natural crystalline structure retains heat well, so it spreads evenly across a consistent 2.7 mm (0.1 in) wall thickness, helping lock in the flavor of pan-fried and grilled dishes. The rim is made thicker to resist warping, while the sides are kept thinner to reduce overall weight.
