Wahei Freiz Wazaippin Nonstick Stir Fry Pan 28cm MB-2078

This 28 cm (11 in) stir fry pan is part of the Wazaippin series from Wahei Freiz, made in a Japanese factory using gravity die casting, in which molten aluminum alloy is poured into the mold under its own weight so that each pan can be shaped by skilled craftspeople. Its deeper sides suit stir frying and dishes with more volume than a standard frying pan.

The cast aluminum body has a natural crystalline structure that holds heat and spreads it evenly across a consistent 2.7 mm (0.1 in) wall thickness, which helps concentrate the flavor of seared and pan-fried foods. The rim is made thicker to resist warping, while the sides are kept thinner to reduce weight.

The interior has a fluororesin nonstick coating (fluororesin ES) for easy food release and cleanup, the exterior has a polished finish, and the handle is phenolic resin.
