This Peking pan from Yamada Kogyosho is a professional grade Chinese cooking tool built for hard daily use. It is hand forged from iron, struck thousands of times to hammer the metal into shape. This hammering process changes the structure of the iron, giving the pan excellent heat conduction, and the textured surface it leaves behind helps oil spread and cling evenly across the pan.
A hole near the rim lets you hang the pan for storage when it is not in use.
Before first use, dry heat the empty pan to burn off the rust preventive coating, then season it with oil. Minor marks or unevenness on the surface are a normal result of the hand forging process and do not affect the pan's quality or performance.
This pan is made in Japan and is offered in six sizes: 21 cm, 24 cm, 27 cm, 30 cm, 33 cm, and 36 cm.
