This Peking pan from Yamada Kogyosho is a professional-grade Chinese cooking tool built for hard daily use. It is hand-hammered from iron, struck thousands of times to forge the metal. The hammering changes the structure of the iron, giving the pan excellent heat conduction, and the textured surface left by the hammering helps oil take to the pan well.
The pan has a wood handle. Before first use, dry-heat the pan to burn off the rust-preventive coating, then season it with oil. Because the handle is wood, take care not to heat it for too long, as this can scorch the handle.
Minor marks or unevenness on the surface may occur during manufacturing. These do not affect the quality or performance of the pan.
This pan is offered in six sizes, from 24 cm to 39 cm.
